Tex-Mex Eggs

Ingredients
  • 2 Eggs & 3 Egg Whites
  • 2 tsp. Oil (Olive, Sunflower or Canola)
  • Diced Onion
  • Diced Green, Red and Yellow Peppers
  • Taco Seasoning (to taste)
  • Shredded or sliced Cheese (grate with Pepperjack)
  • Salsa (for topping)
Directions
  1. Beat eggs and egg whites with wire whisk or fork.  Heat 2 tsp. of oil in skillet, saut?peppers and onion with taco seasoning. Add eggs. 
  2. Cook on low to medium heat.  Top with cheese and salsa.  Serves 2.
