Ingredients
- Juice of 2 to 3 small Lemons, and 1 lemon sliced
- 5 Tablespoons butter
- Water (to cover chicken)
- 4 to 6 Boneless Skinless Chicken Breasts
- Lemon pepper seasoning salt (to taste) OR fresh
ground black pepper
- 1 to 2 Tablespoon(s) sugar (optional)

Directions
Juice 2 or 3 of the lemons and pour over chicken in a
glass baking dish. Melt butter and mix with enough water to
just cover the chicken. Sprinkle desired amount of Lemon
Pepper Seasoning (or cracked black pepper) over the
chicken. Slice the remaining lemon(s) and place on top of
chicken. Cover with foil and bake in a 375 degree oven for
30 minutes or until chicken is lightly browned. (Hint: It is
good to check the water level & baste the chicken pieces
while cooking.)
Serve over brown rice with steamed broccoli spears for a
delicious and nutritious meal. Keep food warm in the oven
