Pindjur .: Warm Pepper Relish

  • 4-5 Large Green Peppers (diced)
  • 1 Red, Yellow, or Orange Pepper (Optional)
  • 3-4 Medium Tomatoes (diced)
  • 4-5 pieces fresh minced garlic
  • 1-2 Tbs. Oil (Sunflower or Olive)
  • Salt (to taste)

*Note: to make spicy, just add 1 or 2 small hot peppers or added Crushed Red Pepper to taste

  1. In a saucepan, place enough oil to cover bottom. Heat slightly and then add diced peppers, garlic and salt. Cook over medium heat and stir frequently so peppers do not burn.
  2.   Once peppers are reduced somewhat (after about 5 or 10 minutes) add diced tomatoes.
  3. Cook uncovered over medium heat, stirring frequently until tomatoes are reduced.
  4. Serve warm with fresh bread and feta cheese. This dish is also great cold.
