Ingredients
- 4-5 Large Green Peppers (diced)
- 1 Red,
Yellow, or Orange Pepper (Optional)
- 3-4 Medium
Tomatoes (diced)
- 4-5 pieces fresh minced
garlic
- 1-2 Tbs. Oil (Sunflower or Olive)
- Salt (to taste)
*Note: to make spicy, just add 1 or 2 small hot peppers or
added Crushed Red Pepper to taste |

Directions
- In a saucepan, place enough oil to cover bottom. Heat
slightly and then add diced peppers, garlic and salt. Cook
over medium heat and stir frequently so peppers do not burn.
- Once peppers are reduced somewhat (after about 5 or 10
minutes) add diced tomatoes.
- Cook uncovered over medium heat, stirring frequently
until tomatoes are reduced.
- Serve warm with fresh bread and feta cheese. This
dish is also great cold.
