Whole Wheat Onion Bread

  • 3 cups Whole Wheat Flour
  • 1 cup Bread Flour
  • Pinch of Salt
  • 1 packet of highly active dry yeast dissolved in warm water (105 F) with 1 tsp sugar (We have used both Fleischmann's RapidRise Yeast and Red Star Quick Rise Yeast)
  • 1 - 2 cups warm water (105 F)
  • thinly sliced onion (red or white)
  • Olive Oil
  • Spices to taste (prepackaged mixture such as Mrs. Dash, Herbes de Provence, or your own special blend of herbs such as dill, basil, oregano, parsley, onion powder, garlic powder, rosemary, etc.
  1. Blend Whole Wheat and White flour together thoroughly with pinch of salt, add small amount of spices to mix if desired (1 - 2 teaspoons to distribute flavor through dough) while dissolving highly active yeast packet according to directions.
  2. Create a hole or dip in the center of the flour mixture, add the yeast mixture then 1 cup warm water, stir with wooden spoon until water is distributed throughout and dough forms, add more water as needed, if you add too much water and the dough becomes sticky, add more flour until desired consistency (dough should be pliable but not very wet).
  3. Knead dough and form into a large ball, cover with cloth and set aside in warm area.  Let rise according to yeast package (generally 30 minutes to 1 hour)
  4. Prepare two 8 inch round pans for the dough by placing olive oil in bottom of pan (enough to cover the bottom (we used 1 TBS and spread with a napkin), place thin onion slices in bottom of pan and top with spices.  Divide dough in half and punch down shaping it to fit in the pan on top of the onions.  Use a brush to place olive oil on top of dough and add additional Onion sliced, pressed into dough slightly and topped with spices.
  5. Bake in oven at 350 F until browned (approx. 30 minutes). 
  6. Makes two 8 inch rounds.
